In an effort to save every penny we have cut out a lot of the running through the fast lane at drive-ins, with the result of
the kids not getting the French fries they love.
I came up with a quick, fast way to make French fries at home.
Boil potatoes in their peelings and refrigerate.
Keep a large bag of grated cheese on hand.
To prepare simply slip the skins off, cut them in long
French fry pieces.
Do not use a lot of shortening like in a French fry machine,
but just enough to cover the bottom of the pan well.
Fry these strips until they are golden brown. While in the
skillet, sprinkle liberally with cheese, and leave them just
long enough for the cheese to melt.
Guaranted these are tasty and I have not seen a kid turn them down, plus they are getting their "French fries," and will
even ask for them.
